Microgreen and Fruit Salad
This recipe is a favourite at our place and is super simple to make.
Salad:
If you are making this for 1 person:
1 package of Medley Mix
1/4 sliced red onion (adjust to your taste)
1/4 sliced sweet pepper
1/2 Pear sliced ( you can substitute apple if you like)
Blueberries or Raspberries
Pecans (optional or substitute with your favourite nut)
If you have more people for dinner, simply multiply by the number of servings. You can also mix and match your favourite microgreens.
Of course, my motto is that recipes are just guides. I use them for inspiration but often never make the exact same thing twice.
Dressing:
50% Organic extra virgin olive oil
50% Aged balsamic vinegar
